Behind The Facades & Delicious Jiangxi Cuisine

This blogs for you Aussie Crusty! So you're having Chinese for dinner with friends. In the west our Chinese is only that of Western style Cantonese. BUT....this term I thought I'd change my local Chinese Cuisine to that of Jiangxi Cuisine.

Found running through the middle of Shangrao city like a healthy green spine are many vegetable fields hidden away behind the cities modern facades. Once they would have been surrounded by scattered clusters of ancient villages which over time, as the city grew around them were replaced by more modern and comfortable dwellings and the fields just like the communities that worked them to survive also decreased in size.

Yet still they supply the city market places and continue to feed the population.

When I do this ride it begins at the Shangrao 'Peoples Square’ which is the site of the municipal government buildings and is used by the government as the standard reference point for measurement of distance in the Shangrao area. The gardens are extremely beautiful and if I remember to take a book with me, I always return on my return journey for an hour or two’s peace and quiet as the sun goes down.

Then it is time to either meet friends for a big dinner or to head out in search of a delicious local dish that I haven’t tried previously and believe me, there are many!

<u>Shangrao and Jiangxi Cuisine</u>

Jiangxi Cuisine, also called &#8216;Gan Cuisine’ is derived from the native cooking styles from within the province.

It has a long history (dating back to the Qin and Han dynasty) and inherits the dishes of past centuries which have developed into the unique native dishes that I get to enjoy during my stay here in Jiangxi. There are also various kinds of local snacks and pastries that are made by using different cooking methods. Based on the Nanchang and Ganzhou schools, Jiangxi food is characterised by its local ingredients and special culinary arts including broiling, steaming, stir-frying, stewing, braising and rice-power steaming.

The food is widely acceptable in China as it is tasty, a little oily, not too rich or too salty yet mostly hot and spicy.

Like the cuisines of neighbouring provinces, Jiangxi cuisine favours overtly spicy flavours and like many regions surrounding it, chilli peppers are directly used as vegetable instead of as flavouring as they are in most other Chinese regional cuisines. One of the main characteristics of the cuisine is that there are rarely any cold dishes nor is anything served raw in contrast to other Chinese cuisines. This is due to that it uses tea oil as its primary cooking oil and if raw tea oil is consumed uncooked, it causes severe stomach problems for most people.

Due to its geography, fish banquets are also one of the characteristics of Jiangxi cuisine and in contrast to Heilongjiang cuisine (in the very north of China, found just beneath Russia) which is famed for fresh Sea Food banquets, Jiangxi cuisine is famed for Freshwater fish banquets. It is also famous for its heavy emphasis on the utilisation of douchi (fermented black beans) and tofu, in comparison to other Chinese cuisines.

Jiangsu Cuisine is also famous for its beautiful appearance. There is also a detailed sequences with which to serve the dishes. All the dishes should not only taste marvellous but also look attractive.

Jiangxi dishes focus mainly on the cooking processes and in terms of cutting skills, there are eighteen varieties and three categories. Seasoning and cooking time are also of vital importance while trays of irregular shape are utilised to emphasise the theme so as to stimulate the guests' appetite.

Peace & Life Beyond The School Walls

Hey Hey and a Big G'Day toya,

Over Sixty Grade 1's Over Sixty Grade 2's Both many times per week. Neither have a Chinese English Teacher.

I worked in Law for nearly twenty years yet this would have to be the hardest and most frustrating jobs ever. It wasn't what I wanted, nor did I sign up for it but now that I am here I will not give up until I find some way to personally conquer the situation. They scream, they race around, they have no control of themselves when a foreign Monkey is put before them day in and day out. I leave most of my Grade 1 classes shaking my head wondering why, I'm here when I could be somewhere else teaching older students who would benefit from my lessons, yet I find myself here. So here I am and it is here that I shall find happiness and fulfillment in the life that has been put before me.

Sometimes though it can be more than difficult, so where do I go after a hard days teaching when I believe that I have taught nothing. Check out this blogs pictures...I take a book/camera and my legs and simply go behind the schools fence and walk, spend time in the temple in peace, eat five cent noodles and I find 'that' quietness.

Needless to say, I hate feeling that I have wasted my time! Time, Time, Time, Time, Time!

The very grains we are made to rely on to give us some sort of structure to our lives. Both our days and nights pass us by under the ungrateful and greedy eyes of time. Forever taking from us, yet never giving in return. Our sands begin to flow from our very first breath. When we give birth we give new life. Yet strangely at the same time are we not also taking the same life. For do we not also begin our pathway to death from the very same first breath that gives us life? Life, you see how confusing it can be when you sit back and think about it! Time, my friends it is up to you how you use your time. But what is the best way to use your time? It's an age old question that!

Do we follow the rules, not drink and smoke and do our best to follow our chosen dogma to be then collected and die by the 8:15am train on the way to work when strangely you are not at the station but in your car listening to the radio when WHAM, the 8:15 decides to collect you anyhow.

No one on the 8:15 will go to work that day and time has caught up with them all! Prior to you unwillingly catching the 8:15 train did you fulfil all your dreams? Did you find the love you have always dreamed of? Did you relax on a mountain top sipping green tea outside of the destination of the day? Did you give birth and raise the child that will carry on your name? Did you did you did you!

Or have you simply continued doing what you have been taught to believe is the right thing to do with your time? Are you still near to and unwilling to break away from your parents protective arms, help and love.

So much time....or so we are led to believe we have! Time has a way of quietly sneaking up on us! Before you know it you are losing time!

Sometimes simply relaxing and reading about how others spend their time is a good way to use your own time. But how much time reading about 'others' time is the right amount of time? That's a good question for all of you readers out there. I spent a LOT of time reading about 'others' time, so much so that a decade of my own time flew by without me doing much at all with my own time. I dined on so many people’s dreams that each week it was like feasting on a banquet of 'other peoples' dreams..

So when is 'your' time to stop feasting upon others time? And when is it time to begin living your own dreams and time?

Why not simply throw them all into the big wok of life and create your own stir fry of time by living your own dreams and taking a book or two with you to feast upon along the way. Why not take the kids out of school and head overseas for a year teaching English in some remote third world country. Most of these countries have what are known as International Schools and their timetables and teachings are very much the same as the schools back home.

We can all do these things.

There are these and so many other possibilities open to us. Yet most people continue to say 'I wish I' or 'I would love to'. When you meet them they are also full of 'Oh you are so lucky to have'. How do I know? Because I used to say them all. It takes but one open and honest moment with yourself and the courage to follow it through and then all of your dreams will lay before you. You may hurt others along the way and I guess this is why so many of us never follow our dreams or take so long to do so.

Anyhow, enough from me about time. It's your time and it is your choice what to do with it. Most spend it wisely but many allow time to pass living a lie. Strangely it is not a lie to anyone but themselves and those they allow inside.

Shangrao & Life In The School So Far

New school. New ups and new downs.

Unlike any another school/province change over the past six and a half years, this one actually took several weeks for me to settle into, mainly due to the fact that my reason for coming here was based purely on lies attached to the end of a Shangrao school fishing rod. As far as Buckland’s and I believed, I was coming here to teach the older students, would have an apartment of my own and be on the same salary as before.

At the end of August, upon arrival (4:30am) from Fujian, I was shown to my new 'shared’ apartment that was still under construction, given a timetable that included 99.9% Grade 1 and Grade 2 with only one Grade 3 class and later was told WHAT my salary was to be. Needless to say the following night I was in a hotel paid for by the school while the workers completed the shared apartment, my salary was back to where it should have been and after a call to Owen Buckland and several weeks of searching, American Travis was moved to a beautiful 16th floor apartment which leaves me here in the dusty and drafty fifth floor classroom at the school.

Don’t get me wrong, besides the noise during the day I actually love it. It’s small, easy to clean and has no kitchen which makes it the perfect &#8216;batch pad’!

Thankfully I have my own computer as the school &#8216;forgot’ to provide one, just as they forgot to provide a kitchen, a sink, sofa, TV & DVD, power points that actually work, a coffee table, a tape recorder and class books for Grade 1 and 2. On the other hand, everything they did provide was great and luckily for me being happy with almost anything I can simply make do with bedside tables for some of the above. I don’t require a kitchen as I eat out for all meals, but if I was a new teacher and new in China I would have boarded the next train out.

The above might sound demanding to some readers but when looking to teach in China for a year, people sign with recruiters such as Buckland’s as there is a contract between them and each school stating what must be provided .

Slowly though I’m gathering what is required and if I choose to move schools next term then I hope to have it set up for the next one or two teachers that will live here. Sometimes it takes a few nudges to remind them, other times its taken a phone call from Buckland’s and other times I’ve had to be a little more extreme eg: last Monday I had students pounding on my door for hours in the morning and they then began throwing water balloons through my window, one hit my computer but thankfully didn’t break until it hit the floor and the rest missed the TV and the power board, I then rang and asked about my sofa and tape recorder and was told that I needed to continue to wait.

Easily solution for a stupid problem.

I waited until the bell rang and then informed the school that there would be no classes until I had both a sofa in my apartment and a tape recorder for class. I was then told that they actually had purchased the sofa several weeks ago but had forgotten to tell me. Pounding doors, water balloons and a forgotten sofa, I looked at the plastic blue chair that I had been sitting on for almost two months each night and day, turned off my phone and went back to bed and when I re-emerged several hours later I found a &#8216;sofa’ type thing on the balcony. It’s not what I would like to have if I was here as a couple as it’s actually office furniture and about as hard and uncomfortable as a ledge of scaffolding.

For me though it’s nothing a folded up quilt or blanket can’t fix. As for the rest of the school.

The staff are absolutely wonderful and I couldn’t have asked to be part of a more beautiful and better English Team. Throughout the week most of them appear in my classes to help out as a Class Assistant and believe me, without them I’d have gone insane within the first few weeks. I’ve taught Grade 1 before but for some reason they seemed to have had much more control of themselves but here, something is juuuuuuust not quite right. I don’t know if they are all a few sandwiches short of a picnic, or a few stubbies short of a slab of beer but they spend most of their time screaming and being completely insane.

Most classes I leave shaking my head wondering why any school would be crazy enough to give Grade 1’s a foreign teacher and no Chinese English Teacher.

They go crazy enough when they visit the zoo, so why in the world put a foreign monkey in their classroom and expect them to behave, even in the slightest. Giving them an actual Chinese English Teacher for their first year instead of me would benefit them one hundred times more than having them scream themselves stupid and learn nothing in my class.

There actually is a foreign teachers saying when it comes to teaching Grade 1: They piss themselves, they shit themselves and in between they scream.

My Grade 2’s are wonderful, most of the time, but I actually have grown to love teaching them much more than I expected to. We can now have fun and most of the time they will control themselves when I let them know that things are getting too loud. My one class of Grade 3’s? What can I say, they are my angels. Actually they try so hard that most of them get really angry with me when I choose other students to do such boring things as reading. Most of the class waits at the office door or at the bottom of my stair well and I then have to empty my teaching bag to allow each of them something to carry to class for me.

Now that’s what I call students that love their English class.

Three afternoons a week I also have an extra class that is made up of the best students from each class in Grade 4, 5 & 6. But for the first month it was such an un-planned mess of no one knowing who was attending and those that did, arrived twenty minutes late so in the end I cancelled it as it is after hours and I have better things to do than wait around for students who would more likely not arrive. But that fact is when there was a handful of them we had a wonderful time and it felt great to be teaching older students again so I asked if we would give it one more try, gave my Do’s & Don’ts and since then each afternoon has been filled to the brim with only students who want to be there to learn. It is never loud and as each afternoon passes more and more of them begin to understanding that we all can actually have fun and learn at the same time.

Now that’s what I also call students that love their English class.

PS: the photo with the spiral staircase, the one of the beautiful light and the building at night is actually Travis’s apartment. The school pays 1000 Yuan a month rent and I’ve been sitting on a plastic chair and playing building blocks with bedside draws for over a month and a half…..nice!
